The celiac sprue, or celiac disease is a chronic, genetic disease that affects the digestive tract and is characterized by intolerance to a set of proteins known as gluten, found in wheat, barley, rye and oats, and their derivatives, and in general all products that come into contact with these grains, which is known as "cross contamination".

The most common symptoms of this disease are abdominal pain, bloating, abdominal distension, chronic diarrhea or constipation and vomiting, among others. These may appear accompanied by conditions such as anemia, osteoporosis, depression, infertility, spontaneous abortions and even some tumors.

In our country, there are no actual figures showing the percentage of people who suffer from this disease, so complicated diagnosis. In this regard, Dr. Ana Ligia Montero, a gastroenterologist and specialist in celiac patients, counsels performed small bowel endoscopy with biopsy of the descending duodenum (upper intestine) to know if you suffer from this disorder.


The only treatment is to maintain a gluten-free diet for life, so the role of nutritionists is indispensable in the life of these patients to counteract the effects of the lack of this group of nutrients.


One of the issues of greatest concern is the lack of gluten-free products on the market, and the lack of clear and complete labels that indicate the presence or absence of gluten in foods.
